American startup has created a method of rapidly aging whiskey while preserving taste

Bespoken Spirits, founded by two partners in Menlo Park, California, said it has raised $2.6 million in

initial capital to launch the process of accelerated aging of alcoholic beverages.

The startup claims its patented system could save the liquor industry more than $ 20 billion a year.

“We use materials science and data analysis to save customers years of time and up to 70% of costs,” the company said.

According to Bespoken, only in the stateKentucky matures over 9.1 million barrels of bourbon and other spirits. Every year, about 20 million gallons of spirits are lost "through evaporation, the wasteful, time-consuming and outdated aging process of drinks in barrels."

The company declares that its patentedthe technology "manages critical chemical reactions that authenticate the aroma, color and taste of alcohol aged in oak barrels, allowing billions of recipes to be created over days, not years." Whiskey usually takes at least three years to mature, and most of its aroma comes from the oak casks used during the maturation process.

"The traditional process of producing alcoholicdrinks are outdated, imprecise, unpredictable, erratic and ineffective, ”said co-founder Martin Janosek. “We have reimagined this process with modern science and green technologies, using the same natural elements.”

The custom-made whiskeys and bourbons are already on sale in stores and have even won several competitions, the company said.
