According to the USDA,The process of producing lab-grown meat, also called cultured meat, begins with the sampling of cells from the tissues of a living animal. However, harvesting the cells "generally does not permanently harm or kill the animal," the department said. Then they are checked and stored in special cells. Then they are moved to large steel tanks.
The tanks act like bioreactors where the cellsmultiply quickly. Their surface is coated with nutrients and protein growth factors. Due to this, the cells differentiate into muscle, fat and connective tissues, similar to those found in ordinary chicken. Once differentiated and ready to be harvested, cells are harvested from tanks and "prepared using normal food processing and packaging methods," the authorities said in a statement.
While lab-grown chicken can betry in restaurants. Upside Foods has partnered with Dominique Crenn, owner of Atelier Crenn, a three-Michelin-starred restaurant. He will serve cultured meats at the Crenn bar in San Francisco. Likewise, the Good Meat product will be served in the restaurant of celebrity chef José Andrés, one of the members of the company's board of directors.
