Named foods that cause cancer. They are served on the New Year's table

Researchers from Queen's University Belfast have called for a ban on nitrite-treated meat following...

how, as part of a new studydiscovered its connection with colorectal cancer. The experiment showed that mice fed meat treated with nitrites developed more tumors than animals fed meat without nitrates or no meat at all.

Nitrites and nitrates are keypreservatives used in the production of sausages. In 2015, the International Agency for Research on Cancer (IARC), a WHO research organization, classified processed meat as a Group I carcinogen. Agency experts have linked diets high in processed meat to a significantly increased risk of several types of cancer.

Since then, further research has beenfocused specifically on the relationship between nitrites, food preservative chemicals, and cancer. A new study published in the journal Nature NPJ Science of Food examines the effects of nitrites on mice bred to be susceptible to colorectal cancer.

Unlike some previous onesStudies in which animals were fed unusually large amounts of nitrites, scientists tested a more moderate diet with added chemicals. For eight weeks, the mice were fed sausages with nitrites, sausage or chemical-free pork.

Only 15% of the total diet of animals consistedfrom pork, with or without nitrites. The researchers noted that this is still a high intake of processed meat in the diet compared to what humans consume. However, previous studies have used feeding models containing 50% processed meat or more. So this is a more moderate amount than in previous studies linking nitrites and cancer.

The mice that had the highest sausage had much more tumors than the control group and the animals that had sausages and pork.

Chris Elliott, director of the Institute for Globalof Food Safety at Queen's University, said the study findings support a link between nitrites and cancer. He argues that the use of nitrites in food should be banned. They are easily replaced with natural, safer alternatives.

Russians often serve sausage cuts on the New Year's table. In addition, the traditional Olivier salad is dressed with sausage or chicken.
